Shortcut Chicken Manicotti
A quick and easy twist on traditional manicotti, this shortcut chicken manicotti is filled with a flavorful mixture of shredded chicken and cheeses, then baked to perfection in marinara sauce.
Ingredients:
- 1 lb cooked chicken, shredded
- 1 box manicotti shells
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil leaves for garnish optional
Instructions:
Preheat oven to 375F 190C
Cook manicotti shells according to package instructions, drain, and set aside
In a large bowl, combine shredded chicken, ricotta cheese, 1/2 cup mozzarella cheese, Parmesan cheese, garlic powder, oregano, basil, salt, and pepper
Stuff each manicotti shell with the chicken mixture
Spread 1 cup of marinara sauce evenly on the bottom of a baking dish
Arrange stuffed manicotti shells in the baking dish
Pour the remaining marinara sauce over the stuffed shells
Sprinkle the remaining mozzarella cheese on top
Cover with foil and bake for 25 minutes
Remove foil and bake for an additional 10 minutes until cheese is bubbly and lightly browned
Garnish with fresh basil leaves if desired before serving
