Vegetable Soup
A hearty and nutritious vegetable soup filled with colorful vegetables and aromatic herbs. Perfect for a comforting meal on a chilly day.
Ingredients:
- 1 cup carrots, diced
- 1 cup celery, chopped
- 1 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 can 14 oz diced tomatoes
- 4 cups vegetable broth
- 1 cup green beans, cut into 1-inch pieces
- 1 cup corn kernels
- 1 cup peas
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
In a large pot, heat olive oil over medium heat
Add garlic and onion, saut until fragrant and translucent
Add carrots and celery, cook for 5 minutes until slightly softened
Pour in vegetable broth and diced tomatoes with their juices
Stir in green beans, corn, and peas
Season with thyme, oregano, salt, and pepper
Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes
Taste and adjust seasonings if needed
Serve hot and enjoy!
