Oven-Baked Shish Kabobs
You can enjoy the flavors of grilled kabobs without having to use an outdoor grill when you bake these shish kabobs. Great for a quick and tasty dinner during the week or an indoor BBQ on the weekend!
Ingredients:
- 1 lb 450g boneless chicken breast, cut into chunks
- 1 lb 450g beef sirloin, cut into chunks
- 1 lb 450g large shrimp, peeled and deveined
- 1 red bell pepper, cut into squares
- 1 green bell pepper, cut into squares
- 1 red onion, cut into wedges
- 1 zucchini, sliced into rounds
- 8 cherry tomatoes
- 8 wooden skewers, soaked in water for 30 minutes
- 1/4 cup 60ml olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions:
Preheat your oven to 400F 200C
In a small bowl, mix together the olive oil, minced garlic, dried oregano, paprika, salt, and pepper to create a marinade
Thread the marinated chicken, beef, shrimp, bell peppers, red onion, zucchini, and cherry tomatoes onto the soaked wooden skewers, alternating between ingredients
Place the skewers on a baking sheet lined with aluminum foil for easy cleanup
Brush the skewers with any remaining marinade
Bake in the preheated oven for 15-20 minutes, turning the skewers halfway through, until the meat is cooked to your desired level of doneness and the vegetables are tender and slightly charred
Remove from the oven and let them rest for a few minutes before serving
