Baked Salmon Filo Parcels

These baked salmon filo parcels are a delicious and elegant way to enjoy seafood. The filo pastry creates a crispy, flaky exterior while keeping the salmon moist and flavorful inside. With just a handful of ingredients, this dish comes together quickly and makes for an impressive main course.

Ingredients:

  • 4 salmon fillets
  • 8 sheets of filo pastry
  • 100g butter, melted
  • 1 lemon, zest and juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

Instructions:

Preheat the oven to 180C 350F

In a small bowl, mix together the melted butter, lemon zest, lemon juice, minced garlic, and chopped dill

Lay out one sheet of filo pastry and brush it lightly with the butter mixture

Repeat with another sheet, laying it on top of the first

Place a salmon fillet in the center of the pastry stack

Season with salt and pepper

Fold the edges of the pastry over the salmon to create a parcel, brushing each fold with the butter mixture to seal it

Repeat with the remaining filo pastry sheets and salmon fillets

Place the parcels on a baking sheet lined with parchment paper

Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and the salmon is cooked through

Serve hot, garnished with extra dill and lemon slices if desired
