Curried Carrot Juice Veggie Num Num



This vibrant and flavorful curried carrot juice is a delicious and nutritious way to enjoy your veggies. The combination of carrots, curry, and aromatic spices creates a warming and comforting drink perfect for any time of the day.

Ingredients:

  • 6 large carrots, peeled and chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tablespoon curry powder
  • 1 tablespoon olive oil
  • 3 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish

Instructions:

In a large pot, heat olive oil over medium heat

Add chopped onion and cook until translucent, about 3-4 minutes

Add minced garlic, grated ginger, and curry powder

Cook for another 2 minutes, stirring constantly

Add chopped carrots and vegetable broth

Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until carrots are tender

Remove from heat and let cool slightly

Using a blender, blend the mixture until smooth

Season with salt and pepper to taste

Serve hot, garnished with fresh cilantro leaves
